Kuraburi Greenview Resort

Less than 30 minutes south of Kuraburi in the most beautiful nook off the highway lies the
Kuraburi Greenview Resort.  A quaint little place to stay and relax nestled in some of the most
gorgeous country in southern Thailand.  A few friends offered to take me for a visit not
long after my arrival in Kuraburi (Lodge on the right).

The cozy bungalows are situated against the hillside and overlook the pool and pond.
It was such a relaxed and lush environment.  I returned that same weekend to
sleep and read by the pool for the better part of a day. Poor me, right?

The four of us enjoyed their coffee shop located at the property entrance. Sipping on
this under a covered patio, during a rainstorm, while overlooking an incredible view,
is a fun little memory I'll always have. If you're on your way to Kuraburi, Koah Lak,
or the Surin Islands try and work this little resort into your schedule.

Peace Hotel: The Cathay Room

Seeing the Bund (famous historic and architectural district) in Shanghai- something that
had been on my list of things to do for the recent trip to China with Mother. Leanna, our
amazing host and friend told us that that Bund would be best by night. "Spectacular!"
After enjoying the lights and view she suggested we take a look at the historic
Peace Hotel just around the corner.

After taking the elevator a few floors up we entered the beautiful Cathay Room at the top of the
hotel. The Cathay Room overlooks the Bund and has such a clean, rich, and special feeling to it-
quite the contrast to the hustle and bustle of the Shanghai streets.

We walked in just before close, but the server was kind enough to let us sit for dessert.

Gorgeous table settings, a menu that encouraged a return for dinner, and the entire place to ourselves.

Dessert #1: Dark chocolate cake concoction with a scoop of chocolate gelato.
For some it'd be too much, but for me it was perfect. Mmm.

Dessert #2: Tart with fruit sorbet. Mother's favorite.

Dessert #3: Pound cake with vanilla ice cream. Delicious as well, but not as mouth watering
as the first two. Loved enjoying the dessert, company, and view from the Cathay Room. Will
definitely return next time for another delicious dessert (at least)!

Fat Boy Pizza (Maxwell's)

Mother told me that Park City had a good slice of pizza to be eaten, so upon leaving the lovely cabin after
enjoying Christmas in Woodland, we decided to go for some Fat Boy Pizza at Maxwell's. Started off with
some buffalo style hot wings.  I usually don't even touch these, but really enjoyed them for a first.

Jake went for the garlic parmesan fettuccine alfredo. Good flavor. Deliciously creamy.
I may have stolen more than my one promised bite. Oops.

The spinach salad that Mum and I shared was easily my favorite thing we had.  Delicious greens with a simple
yet delectable combination of goat cheese, blueberries, candied pecans, and a sweet balsamic reduction.

Annnnd, the Fat Boy Pizza. Delicious! We built our own and added a few different toppings.
It was HUGE.
Didn't even come close to finishing it.  Great thin crust pizza with not too much sauce.
Toppings were fresh (onion=mmmm). Great meal and would definitely return.
Thanks for the lunch mother!
